What music do you guys listen to to do this? I have a playlist of about 40 songs. What tunes do you guys cruise around Nurburgring to?

No music! I have to hear the sound of the engine!

I do listen to music when playing PES, don't care what music, as long as I like it

i listen to these songs randomly when i play racing games:

My heart will go on by Celine Dion
Womanizer by Britney Spears
Keeps Gettin’ Better by Christina Aguilera
Say You,Say Me by Lionel Richie
All I need by Jack Wagner
Morning Train by Sheena Easton
We Built This City by Starship
We Didn’t Start The Fire by Billy Joel.
Take On Me by Aha
When I Grow Up by The Pussy Cat Dolls
Corona and Lime by Shwayze

:)

seriously though, no in-game music.... just plain engine, kerbs, tyre sounds :)

Blimey, that's one of the cheesiest lists of songs I've ever seen. You and Rubens Barrichello have something in common with your musical tastes.

Personally, I usually have music on though I turn it off when I really need to concentrate, as I play better with the sound of the game on. I just play whatever music I happen to like, though I do like to play psychidelic songs (i.e late Beatles, Jefferson Airplane) as I imagine what the game would like like to the drug-influenced people writing those songs. Also airy-fairy, ethereal stuff like Lush and the Cocteau Twins is good as you gently drift off to that sort of music. A blast of alternative rock from Sonic Youth and the Pixies doesn't hurt either.

My musical tastes are pretty scattered, but when playing something really serious like rFactor or Gran Turismo, it's strictly listening to the car. If I'm just leisurely throwing a little something around the track for fun though, I might turn on something.
Really it comes down to just a handful of songs:

The Cardigans: My Favourite Game (Any Gran Turismo fans will understand this one)
AC/DC: Back in Black (Great if you're driving a late 90's McLaren)
Julius Fučík's Entrance of the Gladiators
Edvard Grieg's In the Hall of the Mountain King from Peer Gynt (Especially on tracks like the Nürburgring Nordschleife or Spa)
One Night in Bangkok from Chess

To sum it up, basically anything that's either been associated with racing or just sounds totally epic or has a really intense 4/4 time beat.

Starkid - Crayons (Leama and Moor's In Loving Memory of Starkid Remix)

I also like the music from the GTR 2 game:

Dr. Stephen Baysted - Spa 24 hours

Dr. Stephen Baysted - GTR Monza Grazie

Mozart's 25th Symphony is also a very good one to listen to while driving particularly the first movement.
